New Year's: Collard Greens with Pot Likker

    Source of Recipe

    Cuisine at Home: Holiday Menus

    List of Ingredients

    • 1 piece fat back or salt pork (5 ounces)
    • 2 cups chopped onions
    • 20 cups collard greens, trimmed, chopped (about 4 bunches)
    • 2 cups chicken broth
    • 2 cups water
    • ½ cup apple cider vinegar
    • 1/3 cup sugar
    • 1 tsp red pepper flakes
    • Salt and pepper

    Instructions

    1. Sauté pork in a large pot over medium heat until it starts to brown and the fat begins to melt, about 5 minutes. Add onion and cook until translucent, about 8 minutes.

    2. Stir in collards, tossing with tongs until wilted. Add broth, water, vinegar, sugar, and pepper flakes. Bring to a boil, reduce heat to a simmer, cover, and cook until greens are tender but not mushy, 35 to 45 minutes. Remove pork before serving; season greens with salt and pepper.

      Makes 7 cups.
