New Year's: Collard Greens with Pot Likker

- 1 piece fat back or salt pork (5 ounces)
- 2 cups chopped onions
- 20 cups collard greens, trimmed, chopped (about 4 bunches)
- 2 cups chicken broth
- 2 cups water
- ½ cup apple cider vinegar
- 1/3 cup sugar
- 1 tsp red pepper flakes
- Salt and pepper
Instructions
- Sauté pork in a large pot over medium heat until it starts to brown and the fat begins to melt, about 5 minutes. Add onion and cook until translucent, about 8 minutes.
- Stir in collards, tossing with tongs until wilted. Add broth, water, vinegar, sugar, and pepper flakes. Bring to a boil, reduce heat to a simmer, cover, and cook until greens are tender but not mushy, 35 to 45 minutes. Remove pork before serving; season greens with salt and pepper.
Makes 7 cups.
