    New Year's: Loveless Café Black-Eyed Peas

    List of Ingredients


    • 2 cups dried black-eyed peas
    • 4 cups water
    • 8 ounces fatback or bacon
    • 1¾ tsp salt
    • 1¾ tsp ground black pepper
    • 2 tsp red pepper flakes
    • 1 Tbsp minced garlic
    • 2 small white onions, halved


    Instructions


    1. Rinse peas. In a large stockpot, soak peas for approximately 8 hours, or until tender. Drain.

    2. Cover peas with water and bring to a boil over medium-high heat; boil for 3 to 5 minutes. Drain, rinse, and set aside.

    3. Add 4 cups water and fatback to the pot and boil for 10 minutes. Add peas and boil for 10 minutes. Add peas and remaining ingredients; cook for about 20 minutes, or until tender.

      Makes about 8 servings.
