    New Year's: Smoked Salmon Open-Face Tea Sandwiches

    Recipe Introduction

    "Sandwiches to serve with champagne and caviar. Can you think of a better way to greet the new year?"

    List of Ingredients

    • ½ pound smoked salmon
    • â…” cup mayonnaise
    • 1 Tbsp fresh lemon juice, or to taste
    • Cayenne pepper to taste
    • One 1-pound loaf fine, moist white bread, thinly sliced
    • ½ cup (1 stick) unsalted butter, at room temperature

    Recipe

    Chop the salmon fairly coarsely (I do this with shears). Mix it lightly with the mayonnaise and lemon juice. Season with cayenne and cover and refrigerate until ready to use (it will keep for several days).

    Using a cookie cutter or biscuit cutter, cut the bread into rounds. Spread the butter over them and top with the salmon mixture.

    Serve immediately or cover and refrigerate for a short while. Once made up, these sandwiches do not keep well.

    Serves 16 or more.
