    Christmas: Spritz Cookies

    List of Ingredients


    • 1 cup softened butter (2 sticks)
    • ¾ cup sugar
    • 3 egg yolks
    • 1 tsp vanilla or almond extract
    • 2½ cups bleached all-purpose flour
    • ½ tsp baking powder
    • ½ tsp salt


    Instructions


    1. Preheat oven to 400° F.

    2. Beat butter with sugar until light and fluffy. Add egg yolks and vanilla, and beat until smooth. Sift flour. Measure and sift with baking powder and salt. Add to butter mixture. If very warm, chill dough 10 minutes.

    3. Mold dough in cookie press and force onto ungreased cold cookie sheet. Bake 8 to 10 minutes, or until delicately browned.

      Makes 3 dozen cookies
      (depending on desired shapes)



    Final Comments


    Variations:

    • Butterscotch:
    Substitute 7/8 cup firmly packed brown sugar for 1 cup of white sugar.

    • Spice:
    Sift 1/2 teaspoon ground cinnamon, 1/4 teaspoon ground nutmeg, 1/4 teaspoon ground allspice, and 1/8 teaspoon ground cloves with flour.

    • Chocolate:
    Substitute 1/4 cup unsweetened cocoa powder for 1/4 cup flour, sifting cocoa with the other dry ingredients.
