St. Patrick's Day: Irish Apple Cake

- 1½ cups flour
- ½ tsp baking powder
- ½ cup unsalted butter
- ½ cup plus 2 Tbsp sugar
- 1 egg, beaten
- ½ cup milk
- 1 large apple
- 1 tsp cinnamon

Instructions
- Preheat the oven to 350° F. Lightly butter a 10-inch ovenproof pie plate.
In a bowl, sift the flour with the baking powder. Rub in the butter with your fingertips until the mixture resembles bread crumbs. Stir in the ½ cup sugar, beaten egg, and enough of the milk to form a soft dough. Pat half the dough into the greased pan.
- Peel, core, and chop the apple. Evenly distribute the pieces over the dough. Sprinkle with 1 tablespoon sugar and 1 teaspoon cinnamon. Gently spoon the remaining dough on top of the apple slices so that they are completely covered. Sprinkle with 1 tablespoon sugar.
- Bake for 40 to 50 minutes, until golden and crunchy on the outside. The apple pieces should still be soft on the inside. Serve with whipped cream.

Rachel Allen notes that her husband's grandmother, Myrtle Allen, has been making this cake for years. It's still often taught at Ballymaloe Cooking School in County Cork, Ireland.
