Thanksgiving: Cousin Lula's Sweet Potato Soufflé

List of Ingredients
- 2 cups cooked, mashed sweet potatoes (canned is fine)
- 1 cup granulated sugar
- 2 eggs, beaten
- 1 stick unsalted butter, melted
- ½ cup evaporated milk
- ½ tsp ground nutmeg
- ½ tsp ground cinnamon
- Topping (recipe follows)
Instructions
- Preheat the oven to 400° F.
Whisk all the ingredients together and pour into a greased 2-quart baking dish. Bake 20 minutes. Remove from the oven and add the topping.
To Make the Topping:
• 1 stick unsalted butter
• 1 cup brown sugar
• 1 cup crushed cornflakes
• ½ cup chopped pecans
• 10 pecan halves
Melt the butter; add the sugar and cornflakes. Stir. Spoon over the potato mixture. Sprinkle on the chopped pecans. Dot with the pecan halves. Return to the oven and bake 10 minutes longer.
Makes 4 to 6 servings.
