    Thanksgiving: Cranberry Jam

    List of Ingredients


    • 1 vanilla bean, halved lengthwise
    • 1 (12-ounce) bag (3½ cups) fresh or unthawed frozen cranberries
    • 1½ cups sugar
    • ½ cup fresh orange juice
    • ½ cup water


    Instructions


    1. With tip of a sharp knife, scrape vanilla seeds from pod into a 2-quart heavy saucepan. Add pod and remaining ingredients and bring to a boil, stirring occasionally.

    2. Reduce heat and simmer, stirring occasionally, until thick, about 20 minutes (jam will continue to thicken as it cooks).

    3. Purée jam through food mill set over a bowl; discard skins and vanilla pod. Cool, stirring occasionally.

      Makes about 2 cups.
