Thanksgiving Day After: Turkey-Cranberry Monte Cristo

    Source of Recipe

From "My Southern Food" by Devon O'Day

    List of Ingredients

    • 2 cups vegetable oil
    • 4 slices Texas toast bread
    • 2 tsp cranberry sauce
    • 6 thin slices roast turkey
    • 2 slices Havarti cheese
    • 2 slices honey ham
    • 2 tsp honey mustard
    • 3 large eggs
    • 1/4 tsp salt
    • 2 Tbsp powdered sugar

    Instructions

    1. Heat the oil in a large skillet.

    2. Meanwhile, prepare the first sandwich. Spread one slice of bread with cranberry sauce and top it with three slices of the turkey, one slice of the cheese, and one slice of the ham. Spread a second slice of bread with honey mustard and place on top of the sandwich. Repeat this for a second sandwich. Fasten each sandwich together with at least 4 toothpicks. In a large flat bowl beat the eggs with the salt. Submerge and batter each sandwich with the egg.

    3. Deep-fry each sandwich in the hot oil for about 2 minutes on each side, or until golden brown. Remove from the oil and place on paper towels to soak up any excess oil. Sprinkle the sandwiches with a fine dusting of powdered sugar, cut the sandwiches in half crosswise, and remove the toothpicks before serving.

      Makes 2 sandwiches.
