Thanksgiving: Herbed Citrus Gravy

"You may vary the herbs according to your preference; thyme, sage, and tarragon, or a combination, also work well. This is a good gravy to make as a backup, as you don't need turkey drippings as a base. Use vegetable stock to make this a vegetarian gravy."
List of Ingredients
â—¦ 7 cups turkey stock, chicken stock, or low-sodium poultry broth
â—¦ ¼ cup cornstarch
â—¦ ½ cup minced fresh flat-leaf parsley
â—¦ 1 tablespoon finely grated lemon zest
â—¦ 1 tablespoon fresh lemon juice
â—¦ Kosher salt and freshly ground pepper
Recipe
Pour all but ¼ cup of the stock into a wide saucepan and place over medium-high heat. Bring to a simmer and simmer briskly for 10 minutes.
In a small bowl, stir together the cornstarch and the remaining ¼ cup stock to make a paste. Gradually stir the paste into the simmering liquid, then add the parsley, lemon zest, and lemon juice. Cook, stirring, until the gravy thickens, 3 to 4 minutes. Season with salt and pepper.
Pour the gravy into a warmed gravy boat for serving.
