Thanksgiving: Mashed Sweet Potatoes with French Meringue

- 4 egg whites
- Pinch each cream of tartar and salt
- 3/4 cup sugar
- 3 cups mashed, hot sweet potatoes (about 2 pounds uncooked)
- 1 Tbsp soft butter
- 2 Tbsp crystallized ginger, finely chopped
- 1 to 2 Tbsp orange juice
- Pinch salt
Instructions
- Preheat oven to 500° F.
- For meringue, beat egg whites and cream of tartar at medium-high speed of electric mixer until soft peaks form. Combine salt and sugar in a small bowl; gradually add to egg whites, beating at high speed until stiff peaks form.
- Combine sweet potatoes, ginger and orange juice in medium bowl; spread in 2-quart casserole. Spread meringue over sweet potatoes. Bake about 3 minutes, or until meringue is golden. Serve immediately.
Makes 6 servings.
