    Thanksgiving: Mashed Sweet Potatoes with French Meringue

    List of Ingredients


    • 4 egg whites
    • Pinch each cream of tartar and salt
    • 3/4 cup sugar
    • 3 cups mashed, hot sweet potatoes (about 2 pounds uncooked)
    • 1 Tbsp soft butter
    • 2 Tbsp crystallized ginger, finely chopped
    • 1 to 2 Tbsp orange juice
    • Pinch salt


    Instructions


    1. Preheat oven to 500° F.

    2. For meringue, beat egg whites and cream of tartar at medium-high speed of electric mixer until soft peaks form. Combine salt and sugar in a small bowl; gradually add to egg whites, beating at high speed until stiff peaks form.

    3. Combine sweet potatoes, ginger and orange juice in medium bowl; spread in 2-quart casserole. Spread meringue over sweet potatoes. Bake about 3 minutes, or until meringue is golden. Serve immediately.

      Makes 6 servings.
