Thanksgiving: Really Easy Cranberry Pecan Brie

- 1 (8-ounce) round Brie cheese, room temperature
- 1/3 cup dried cranberries
- 1 Tbsp firmly packed brown sugar
- 1 Tbsp butter
- 2 Tbsp chopped pecans or walnuts
Instructions
- Make a shallow bowl in the top of the Brie to hold the cranberry topping: Using a paring knife, make a shallow cut in the top of the rind about 1/4-inch from the edge. Peel or scrape away the rind in the middle, leaving a 1/4-inch rim. Place the Brie on a pretty microwave-safe serving dish, and set aside while you make the topping.
- Combine the cranberries, brown sugar, butter and nuts in a small microwave-safe bowl. Place in the microwave and heat on high for 30 to 40 seconds, or until the butter melts. Remove the bowl and stir to combine.
- Spoon mixture on top of the Brie. Place the cheese in the microwave and heat on high for 45 to 60 seconds. If the Brie is warm, soft and gooey, it's ready to serve. If it isn't, continue to heat for 15-second intervals.
Serve with crackers or French bread.
