    Christmas: Traditional Peanut Brittle

    From "Southern Living Christmas Cookbook"

    List of Ingredients


    • 1 cup sugar
    • ½ cup light corn syrup
    • 1/8 tsp salt
    • 1 cup dry-roasted or shelled raw peanuts
    • 2 Tbsp butter
    • 1 tsp baking soda
    • 2 tsp vanilla extract


    Instructions


    1. Cook first three ingredients in a 2-quart heavy saucepan over medium heat, stirring constantly, until mixture starts to boil. Cover and boil, without stirring, 2 minutes. Uncover and boil, without stirring, 3 minutes more or until a candy thermometer reaches 310° F.

    2. Stir in peanuts gently and cook 1 to 2 minutes more, or until mixture is golden brown. Remove from heat, and stir in butter and remaining ingredients.

    3. Pour mixture into a buttered 15- x 10-inch jellyroll pan; spread thinly. Allow to stand at room temperature 5 minutes or until hardened. Break into pieces. Store in an airtight container.

      Makes 1 pound.
