Christmas: Traditional Peanut Brittle

- 1 cup sugar
- ½ cup light corn syrup
- 1/8 tsp salt
- 1 cup dry-roasted or shelled raw peanuts
- 2 Tbsp butter
- 1 tsp baking soda
- 2 tsp vanilla extract
Instructions
- Cook first three ingredients in a 2-quart heavy saucepan over medium heat, stirring constantly, until mixture starts to boil. Cover and boil, without stirring, 2 minutes. Uncover and boil, without stirring, 3 minutes more or until a candy thermometer reaches 310° F.
- Stir in peanuts gently and cook 1 to 2 minutes more, or until mixture is golden brown. Remove from heat, and stir in butter and remaining ingredients.
- Pour mixture into a buttered 15- x 10-inch jellyroll pan; spread thinly. Allow to stand at room temperature 5 minutes or until hardened. Break into pieces. Store in an airtight container.
Makes 1 pound.
