    Valentine's Day: Chocolate Strawberry Parfaits

    List of Ingredients


    • 3 Tbsp cold water
    • 1 envelope unflavored gelatin
    • 1/4 cup boiling water
    • 1 cup sugar
    • 1/4 cup cocoa powder
    • 5 cups heavy whipping cream, divided
    • 1/2 cup frozen sliced strawberries, in syrup
    • 1 (14-ounce) can sweetened condensed milk
    • 1 (8-ounce) package cream cheese, softened
    • 1 drop red food coloring
    • Fresh whipped cream, fresh strawberries (optional)


    Instructions


    1. In a medium bowl, combine cold water and gelatin; let stand 2 minutes. Pour boiling water over gelatin mixture, stirring to dissolve; set aside. In a small bowl, combine sugar and cocoa powder; set aside.

    2. In a large bowl, beat 4 cups heavy cream with an electric mixer at medium-high speed until thickened. Gradually add sugar mixture, 1 tablespoon at a time, beating until stiff peaks form. Stir in gelatin mixture. Cover and chill 4 hours.

    3. In the container of an electric blender, purée strawberries.

    4. In a large bowl, combine condensed milk, cream cheese, and strawberry mixture. Beat with an electric mixer until combined. Add 1 cup cream, and red food coloring. Beat with an electric mixer at medium-high speed until soft peaks form. Cover and chill 4 hours.

    5. Spoon or pipe alternating layers of chocolate mousse and strawberry mousse into serving dishes; cover and chill up to 8 hours. To serve, top with whipped cream and strawberries, if desired.

      Makes 10 to 12 servings.
