    Valentine's Day: Strawberries in Champagne

    • 1 envelope unflavored gelatin
    • ¼ cup each: cold water and sugar
    • 1½ cups champagne (divided)
    • 1 cup halved fresh strawberries (divided)
    • Whipped cream rosettes, for garnish, optional


    Instructions


    1. In a 2-cup glass measure, dissolve gelatin in cold water; let stand 5 minutes.

    2. Stir in sugar and ½ cup champagne. Microwave on high 2 minutes, or until mixture just begins to boil. Stir to be sure sugar and gelatin are completely dissolved. Add remaining champagne.

    3. Reserve 4 strawberry halves for garnish. Distribute remaining strawberries in 4 champagne glasses. Pour gelatin mixture into glasses and refrigerate at least 2 hours. Garnish with whipped cream rosettes and reserved strawberry halves.

      Makes 4 servings.
