    Amaretti Apricot Ice Cream

    List of Ingredients


    • 2 cups heavy cream
    • 2 cups crumbs made from amaretti cookies (16 small or 12 large)
    • 2 cups canned apricots with their syrup
    • ¼ cup sugar
    • Juice of 1 lemon


    Instructions


    1. With electric mixer, whip heavy cream in large mixing bowl to stiff peaks. Fold in amaretti crumbs and let sit to soften slightly.

    2. In food processor, process apricots with syrup until smooth. Pass purée through fine-mesh strainer, then stir in sugar and lemon juice. Fold apricot purée into whipped cream mixture.

    3. Spoon apricot cream into ice-cream maker and freeze according to manufacturer's directions.

      Makes one quart.
