Cantaloupe Ice Cream

- 1 large, very ripe cantaloupe
- 2 egg yolks
- 1/2 cup sugar
- 1 cup whole milk
- 3 cups whipping cream
Instructions
- Peel cantaloupe and purée in blender. Beat egg yolks and sugar until light and fluffy. In a double boiler over medium heat, combine egg mixture and milk; cook until mixture reaches 160° F (coats back of spoon).
- Remove from heat, cover with plastic wrap, and cool in refrigerator. When cool, add cantaloupe and whipping cream to egg mixture, and mix well. Cool mixture to 40° F in your refrigerator.
- Transfer cold mixture to the ice cream freezer and follow manufacturer's instructions.
Makes about 2 quarts.
