    Cantaloupe Ice Cream

    From "The Complete Idiot's Guide to Homemade Ice Cream"


    List of Ingredients


    • 1 large, very ripe cantaloupe
    • 2 egg yolks
    • 1/2 cup sugar
    • 1 cup whole milk
    • 3 cups whipping cream


    Instructions


    1. Peel cantaloupe and purée in blender. Beat egg yolks and sugar until light and fluffy. In a double boiler over medium heat, combine egg mixture and milk; cook until mixture reaches 160° F (coats back of spoon).

    2. Remove from heat, cover with plastic wrap, and cool in refrigerator. When cool, add cantaloupe and whipping cream to egg mixture, and mix well. Cool mixture to 40° F in your refrigerator.

    3. Transfer cold mixture to the ice cream freezer and follow manufacturer's instructions.

      Makes about 2 quarts.
