    Old-Fashioned Chocolate Custard Ice Cream

    Source of Recipe

Cooking with Paula Deen: Chocolate Celebration

    List of Ingredients

    • 7 egg yolks
    • ¾ cup sugar
    • 3 Tbsp unsweetened cocoa powder
    • Dash salt
    • 2 cups half-and-half
    • 1½ cups heavy whipping cream
    • 3 (1-ounce) squares semisweet chocolate
    • 1 Tbsp vanilla extract

    Instructions

    1. In a small bowl, whisk together egg yolks, sugar, cocoa and salt; set aside.

    2. In a large saucepan, combine half-and-half and cream. Heat over medium-low heat until cream mixture is barely simmering. Pour one-fourth of the hot cream mixture into the egg-yolk mixture, whisking constantly. Cook, over medium-low heat, until mixture is thickened and coats a spoon, about 10 minutes.

    3. Add chocolate and vanilla, stirring until chocolate is melted and mixture is smooth. Pour mixture through a sieve. Cover and chill for 4 hours. Freeze in an electric ice cream freezer according to manufacturer's instructions.
If desired, serve in ice cream cones, topped with chocolate sprinkles.

      Makes about 6 cups.
