    Peach Sherbet

    From "The Complete Idiot's Guide to Homemade Ice Cream"


    List of Ingredients


    • 5 to 6 peaches (4 cups puréed)
    • 1 cup sugar
    • 3 cups half-and-half
    • 1 cup water


    Instructions


    1. Wash peaches and remove pits (do not peel). In a blender, purée peaches until smooth. If the mixture is lumpy, pass it through a sieve.

    2. In a mixing bowl, combine puréed peaches, sugar, half-and-half, and the water. Mix until sugar is dissolved. Cool mixture to 40° F in your refrigerator.

    3. Place cold mixture into the ice cream freezer and freeze according to manufacturer's directions.

      Makes 2 quarts.
