    Strawberry-Pineapple Frozen Yogurt

    Recipe Introduction

    "When summer temperatures soar, nothing hits the spot like an ice-cold, creamy treat. Since its introduction in the 1980s, frozen yogurt has become wildly popular. It seems as if there is a frozen yogurt shop on every corner. Frozen yogurt is easy to make and offers a great lower-calorie alternative to ice cream, yet still satisfies my sweet tooth. Strawberry and pineapple—two of my favorite fruits—work beautifully together in this combination."

    List of Ingredients

    â—¦ 2 cups fresh strawberries, hulled and sliced
    â—¦ 1 ½ cups ½-inch chunks fresh pineapple
    â—¦ 3 tablespoons pineapple juice
    â—¦ ¼ cup Truvía Natural Sweetener
    â—¦ 1 14-ounce can coconut milk
    â—¦ 3 cups full-fat vanilla Greek yogurt

    Recipe

    Combine the strawberries, pineapple chunks, pineapple juice, and Truvía in a saucepan over medium heat. Cook, stirring occasionally, until the Truvía has dissolved.

    Pour the mixture into a blender and blend until smooth, about 30 seconds. Pour the mixture into a bowl and let cool for 10 minutes. Gradually whisk in the coconut milk, followed by the yogurt. Cover and chill the yogurt mixture in the refrigerator for 1 hour.

    Pour the yogurt mixture into an ice cream maker.
    Churn until the yogurt is frozen, 25 to 30 minutes. Serve immediately, or transfer to a container and freeze for an additional 2 to 3 hours or overnight.

    Makes 6 to 8 servings
