    Sweet Cherry Ice Cream with Amaretto

    List of Ingredients


    • 1 lb. fresh Bing cherries, pitted (or frozen unsweetened pitted cherries, thawed)
    • 1/2 cup sugar
    • 1-1/2 cups half-and-half
    • 1-1/2 Tbsp Amaretto liqueur


    Instructions


    1. Purée cherries with sugar in processor.

    2. Transfer purée to heavy medium non-aluminum saucepan. Stir in half-and-half. Bring mixture just to boil over medium heat, stirring occasionally. Pour into bowl. Stir in Amaretto. Cool. Cover and refrigerate until well-chilled. (Can be prepared 1 day ahead.)

    3. Freeze in an ice cream maker according to the manufacturer's directions. (Can be prepared 1 day ahead. Freeze in covered container. Soften slightly in refrigerator before serving, if necessary.)

      Makes about 5 cups.
