    Baked Chicken Tenders with Honey Mustard Sauce

    Recipe Introduction

    "A household with three boys under age 5 equals a whole lot of chicken tenders, so I've become an expert in the art of finger-friendly poultry options. When I don't have traditional breadcrumbs on hand, I raid the pantry for any variety of cereal that I (or more commonly, the boys) can pulverize into a coating. Getting the kids in on the cooking action is one way to guarantee zero protests come dinner time. If they've made it, they're way more likely to eat it!"

    List of Ingredients

    For the Honey Mustard Sauce:
    â—¦ ½ cup mayonnaise
    â—¦ 3 tablespoons honey
    â—¦ 2 tablespoons Dijon mustard
    â—¦ 1 tablespoon fresh lemon juice
    â—¦ ½ teaspoon kosher salt, plus more for seasoning
    â—¦ â…› teaspoon paprika

    For the chicken tenders:
    â—¦ Cooking spray
    â—¦ ½ cup all-purpose or whole-wheat flour
    â—¦ 1 teaspoon kosher salt
    â—¦ ¼ teaspoon black pepper
    â—¦ 2 large eggs
    â—¦ 4 cups crispy rice cereal, crushed
    â—¦ 1 ¼ pounds chicken tenders, tendons removed

    Recipe

    Make the sauce:
    In a small bowl, whisk together the mayonnaise, honey, mustard, lemon juice, salt, and paprika. Taste and season with more salt if needed.

    Make the chicken tenders:
    Preheat the oven to 475° F. Line a baking sheet with foil and coat it generously with cooking spray.

    In a shallow bowl, whisk together the flour, salt, and pepper. In a second shallow bowl, whisk the eggs together with 3 tablespoons of the honey mustard sauce, then cover and refrigerate the remaining sauce. In a third shallow bowl, spread out the crushed cereal.

    Dredge one of the chicken tenders in the flour mixture, then dip it into the egg mixture, shaking off any excess. Immediately add it to the bowl with the cereal, pressing the cereal firmly onto all sides, then place the tender on the baking sheet. Repeat the breading process with the remaining tenders, spacing them 1 inch apart on the sheet.

    Spray the tenders with cooking spray. Bake for 15 minutes, flipping them once halfway through, until the chicken is cooked through and crispy. Remove the chicken tenders from the oven and serve with the honey mustard sauce for dipping.
