    Baked Chicken + Chipotle Taquitos

    List of Ingredients


    • 2 cups shredded cooked chicken
    • 2 ounces cream cheese
    • 1 cup shredded sharp white Cheddar cheese
    • 3 tablespoons chipotle salsa
    • 1 teaspoon ground cumin
    • ½ teaspoon garlic powder
    • 2 tablespoons chopped fresh cilantro
    • Juice of 1 lime
    • Salt
    • Freshly ground black pepper
    • 12 (8-inch) tortillas of choice
    • Cooking spray or 1 tablespoon olive oil


    Instructions


    1. Preheat the oven to 400° F. Line a baking sheet with foil. Soak 12 toothpicks in a small bowl of water.

    2. In a medium pan, add the chicken, cream cheese, cheese, salsa, cumin, garlic powder, cilantro, and lime juice. Heat on medium heat until the cheese is melted and all of the ingredients are well incorporated. Season with salt and pepper.

    3. Wrap a few tortillas at a time in damp paper towels, and heat them in the microwave for 20 to 30 seconds, or until the tortillas can roll without cracking. Place one tortilla in front of you, and fill it with 2 to 3 tablespoons of the filling. Tightly roll the tortilla and place it seam-side down on a baking sheet. If your tortilla starts to unroll, stick a toothpick into it before baking.

    4. Spray the taquitos with cooking spray or brush with olive oil.

    5. Bake for 15 to 20 minutes or until golden brown. Let cool for 5 to 10 minutes and remove toothpicks before serving.

      Makes six (2-taquito) servings



    Final Comments


    • It's a great idea to make a double batch and freeze half of the taquitos before baking them — that way you can easily have a healthy meal another day when you're tight on time. Just take the taquitos out of the freezer, place them on a baking sheet, and bake at 400° F for 20 to 25 minutes.
