    Banana Snack Cakes

    Adapted from "Better Homes and Gardens Homemade Cookies"

    List of Ingredients


    • ½ cup unsalted butter, softened (1 stick)
    • 1-1/3 cups granulated sugar
    • 1½ tsp baking powder
    • ½ tsp baking soda
    • ¼ tsp salt
    • 1 egg
    • 1 cup mashed ripe bananas (about 3)
    • ½ cup sour cream
    • 1 tsp vanilla
    • 2 cups all-purpose flour
    • ¾ cup chocolate chips
    • Powdered sugar, to garnish


    Instructions


    1. Preheat oven to 350° F. Lightly grease a 15- x 10-inch baking pan; set aside.

    2. In a large mixing bowl, beat butter with an electric mixer on medium to high speed for 30 seconds. Add sugar, baking powder, baking soda and salt; beat until combined, scraping sides of bowl occasionally. Beat in the egg, mashed bananas, sour cream and vanilla until combined. Beat or stir in flour. Stir in chocolate chips. Pour the batter into the prepared pan, spreading evenly.

    3. Bake for about 25 minutes or until a wooden toothpick inserted in the center comes out clean. Cool completely in a pan on a wire rack. Sprinkle with powdered sugar. Cut into bars.

      Makes 48 bars.



    Final Comments


    Bananas and chocolate chips make these moist little cakes irresistible. They travel well, and you can store them in the freezer for up to 3 months.
