    Chicken and Ranch Wraps

    Source of Recipe

From "Come on Over!" by Elizabeth Heiskell

    Recipe Introduction

"There really ought to be a manual on how to raise children. Okay, I know there are probably 1,000 on the market already. But I am talking about one with advice that I could have used — real world, practical advice. For example, if it's time to leave the McDonald's PlayPlace and your child is at the top of the enclosed playhouse and refuses to come out? Do not lose your mind and try to climb up the tube slide to drag them out. You will not fit, you will get stuck, and the manager will have to come and pull you out by the feet to get your body unwedged. These are the things that I needed to know. Another thing: If you have a picky eater, don't make a fuss. Don't threaten the child, and don't put the child in time-out; just put some ranch on it. Problem solved! This lunchbox wrap is a tasty treat your kids will absolutely love."

    List of Ingredients

    â—¦ 4 (8-inch) flour tortillas
â—¦ 2 cups shredded or sliced cooked chicken
â—¦ ½ cup shredded mozzarella cheese
    â—¦ ¼ cup fresh spinach
    â—¦ ½ cucumber, thinly sliced
â—¦ ¼ cup homemade or store-bought ranch dressing

    Recipe

Lay the tortillas on your counter. Divide the chicken, cheese, spinach, and cucumber between them, making sure to leave a 1-inch border all the way around the edges.

    Drizzle with the ranch dressing.
Roll up the wraps burrito-style; wrap tightly in foil or plastic wrap; pack for lunch or chill in the fridge for up to 3 hours (or serve immediately).

    Makes 4 wraps
