    Cinnamon French Toast

    • 4 eggs
    • 1 cup milk
    • 1 tsp ground cinnamon, plus more for serving
    • 8 slices good-quality day-old white bread, each about ½-inch thick
    • 1 Tbsp unsalted butter, or as needed
    • 1 Tbsp canola oil, or as needed


    Instructions


    1. Preheat the oven to 200°F.
      In a bowl, whisk together the eggs, milk, and cinnamon until lightly frothy. Pour into a large, shallow glass or ceramic dish and add enough bread slices to fit comfortably. Soak the slices, turning once, for a few seconds total. Carefully transfer the slices to a plate and repeat until all the slices are soaked.

    2. In a large, heavy frying pan or griddle over medium-low heat, warm 1½ teaspoons each butter and oil. When the fat is hot, add enough bread slices to fit comfortably in a single layer and cook until golden brown on the bottoms, about 2 minutes. Turn and cook until golden brown on the second sides, about 2 minutes longer. Transfer to a rimmed baking sheet and keep warm in the oven. Repeat with the remaining soaked bread, adding more butter and oil in equal amounts to the pan as needed.

    3. Just before serving, lightly sprinkle each slice with cinnamon.


      Makes 4 servings
