    Crispy-Chewy Popcorn Balls

    Recipe Introduction

    "These came about after a conversation with friends about the 'good houses' on Halloween, the ones with full-sized candy bars, candy apples, and popcorn balls. I couldn't stop thinking about the popcorn balls! Back before salty-sweet was A THING, there they were. Anyway, then I remembered an earlier convo I had with Adeena about wanting to re-create those Golden Grahams cereal bars from back in the day that my mom thought were granola bars—i.e., *healthy*—and we were off to the races. These ooooooze fall, with their pops of graham goodness. The real magic is in the marshmallow (two kinds!), with a near-appalling amount of butter mixed into the sticky goo, and I have ZERO apologies for it."

    List of Ingredients

    â—¦ 1 stick (8 tablespoons) salted butter
    â—¦ 1 (12-ounce) bag large marshmallows
    â—¦ 2 tablespoons corn syrup
    â—¦ ½ teaspoon kosher salt
    â—¦ 6 cups lightly salted popped popcorn
    â—¦ 2 cups Rice Krispies cereal
    â—¦ 1 ½ cups Golden Grahams cereal
    â—¦ 1 cup mini marshmallows

    Recipe

    Line a baking sheet with wax paper. Melt the butter in a large (at least 6-quart) pot over medium heat. Add the large marshmallows and cook, stirring, until melted, 3 to 4 minutes. Stir in the corn syrup and salt and cook 1 more minute.

    Place the popcorn, Rice Krispies, and Golden Grahams in a large bowl. Pour the melted marshmallow mixture over the dry ingredients and stir until everything is coated, trying not to crush the popcorn and cereal, and cool for 2 minutes. Gently stir in the mini marshmallows.

    Lightly oil or spray your hands with a neutral cooking spray. Use your hands to form about 1 cup of the mixture into a compact but not smashed-together ball. Repeat with the remaining mixture. Wrap individually in cellophane and tie with ribbons.

    Makes 9 balls
