French Toast Sticks with Cinnamon-Butter Dip

Dip:
◦  8 Tbsp (1 stick) unsalted butter, softened
◦  ¼ cup maple syrup
◦  2 tsp ground cinnamon
French Toast Sticks:
◦  2 large eggs
◦  ½ cup half-and-half
◦  ½ tsp pure vanilla extract
◦  3½ cups finely crushed Honey Bunches of Oats
◦  4 slices plain Texas toast, cut into 1-inch sticks
◦  Confectioners' sugar
Recipe
To make the dip, mix together the butter, maple syrup, and cinnamon in a bowl. Set aside.
To make the French toast sticks, in a shallow bowl, whisk together the eggs, half-and-half, and vanilla. Place the crushed cereal in a separate shallow bowl.
Melt the butter in a large skillet over medium heat. Dip the bread sticks into the egg mixture, shaking off any excess, then dip into the cereal, pressing gently to coat.
Add the sticks to the skillet and cook until golden brown, about 3 minutes per side.
Serve the French toast sticks warm, dusted with confectioners' sugar, with a small dish of cinnamon-butter dip alongside.
