    Gooey Marshmallow Krispie Treats

    Source of Recipe

From "The Cookies and Cups Cookbook" by Shelly Jaronsky

    Recipe Introduction

"This is the recipe that you never knew you needed. We all grew up on the popular marshmallow bar. My mom used the recipe on the side of the Rice Krispies box, which is fantastic. And as I grew up, Krispie Treats remained one of my most favorite indulgences. My recipe takes the original and makes it lighter and gooier with just a few simple tricks. Once you start making Krispie Treats with my recipe, you'll never go back!"

    List of Ingredients

    â—¦ 5 tablespoons salted butter
    â—¦ 10 cups mini marshmallows
    â—¦ ½ teaspoon vanilla extract
    â—¦ ½ teaspoon kosher salt
â—¦ 6 cups Rice Krispies cereal

    Recipe

Line a 9 x 9-inch pan with foil and coat lightly with cooking spray.

In a large pot, melt the butter over low heat. Once the butter is melted, add 8 cups of the mini marshmallows, stirring constantly.

Once the marshmallows are just melted, remove immediately from the heat and stir in the vanilla and salt until combined. Next add the cereal and stir until just coated in marshmallow mixture. Finally, stir in the remaining 2 cups mini marshmallows.

Pour the mixture into the prepared pan and press evenly (see Tip). Allow to cool completely before cutting into squares. These are best served the same day, but they can be stored airtight at room temperature for up to 2 days.

    Makes 16 squares

    • Tip:
Use a piece of parchment or wax paper coated lightly with cooking spray to help press the mixture into the pan to avoid sticky bits all over your fingers!
