Honey-Ginger Baked Salmon

"Getting picky eaters to eat fish can sometimes be a feat (especially if it isn't breaded and fried), but having them grow up eating fish is important because it's jam-packed in omega-3s that help with brain development. While tender and juicy on the inside, this salmon has a tasty honey and ginger glaze that gives it a slightly crunchy crust — something I have found few toddlers can resist."

â—¦ 1-inch piece fresh ginger, minced
â—¦ 1 clove garlic, minced
â—¦ 3 tablespoons soy sauce
â—¦ 3 tablespoons squeezed orange juice
â—¦ 3 tablespoons honey
â—¦ Freshly ground black pepper
â—¦ 1 pound salmon fillet
Recipe
Preheat the oven to 400° F. In a small bowl, mix the ginger, garlic, soy sauce, orange juice, honey, and pepper.
In a shallow glass baking dish, place the salmon, and coat with the honey-ginger glaze. Cover the dish, and let it marinate in the refrigerator for 30 minutes, turning once.
Place the baking dish in the oven, and bake, uncovered, for 15 minutes, or until you can easily flake the fish with a fork. For a crispy crust, turn the oven to broil, and cook for an additional 5 minutes. Let cool slightly and serve. You might want to remove the skin for your toddler.
