â—¦ 4 ½ cups cake flour
â—¦ 1 teaspoon baking soda
â—¦ 1 teaspoon salt
â—¦ 2 teaspoons cinnamon
â—¦ 1 cup honey
â—¦ ½ cup sugar
â—¦ ½ cup milk
â—¦ 3 tablespoons shortening, melted
â—¦ ½ teaspoon white vinegar
â—¦ 1 large egg, well beaten
Recipe
Sift together the flour, baking soda, salt, and cinnamon three times. This fully integrates the flavors of the dry ingredients.
In a saucepan, combine the honey, sugar, milk, shortening, and vinegar over medium heat, stirring constantly until hot (do not boil). Remove the liquid from the heat and allow it to cool. Blend in the egg and gradually add in the flour mixture, beating after each addition. Move the dough to a large bowl, cover with a cloth, and allow it to rise overnight in a cool place.
Preheat the oven to 425 degrees.
Turn out the dough on a floured surface, knead well, and roll it out ¼ inch thick. Cut out the cookies with a gingerbread man cutter and bake on a greased baking sheet for 10 minutes. Cool the cookies before decorating, or enjoy them plain with a good cup of coffee.
Makes 3 dozen cookies
