    Peanut Butter & Jelly Thumbprints

    List of Ingredients


    • 1/2 cup sugar
    • 1/2 cup firmly packed brown sugar
    • 1/2 cup butter or margarine, softened
    • 1/2 cup peanut butter
    • 1 tsp vanilla
    • 1 egg
    • 1-1/4 cups all-purpose flour
    • 1 tsp baking soda
    • 1/2 tsp salt
    • 1/4 cup sugar
    • Jelly, jam or preserves


    Instructions


    1. Heat oven to 375 degrees (F). In large bowl, combine 1/2 cup sugar, brown sugar and butter; beat until light and fluffy. Add peanut butter, vanilla and egg; blend well.

    2. Add flour, baking soda and salt; mix well. Shape dough into 1-inch balls; roll in sugar. Place 1 inch apart on ungreased cookie sheets. With thumb or handle of wooden spoon, make deep indentation in center of each cookie.

    3. Bake at 375 degrees (F) for 6 to 9 minutes or until set and golden brown. Immediately remove from cookie sheets. Cool completely. Spoon 1/2 teaspoon jelly, jam or preserves into each cookie.

      Makes 4 dozen cookies.



    Final Comments


    High-Altitude Adjustment (above 3500 ft.): Increase flour to 1-1/2 cups. Bake as directed above.
