    Pizza Casserole for Kids

    Source of Recipe

From "The Best Casserole Cookbook Ever" by Beatrice Ojakangas

    Recipe Introduction

"This is a simple and straightforward combination of ingredients that is kid-friendly. If there are leftovers, you'll be so glad you have something for their midnight snacks. Even though this looks similar to many hamburger casseroles, it has the distinct flavors of pizza. You can top it all off with thinly sliced pepperoni—if that's how the kids 'ordered' it."

    List of Ingredients

    â—¦ 1 package (8 ounces) elbow macaroni
    â—¦ 1 pound ground beef
    â—¦ 1 teaspoon dried oregano
    â—¦ ½ teaspoon dried basil
    â—¦ ½ teaspoon salt
â—¦ 1 medium onion, finely chopped
â—¦ 1 green bell pepper, seeded and finely chopped (optional)
    â—¦ 1 can (15 ounces) tomato sauce
    â—¦ 2 cups shredded part-skim mozzarella cheese
â—¦ 2 cups shredded cheddar cheese
â—¦ ½ cup grated Parmesan cheese
â—¦ ¼ to ½ pound sliced pepperoni (optional)

    Recipe

Preheat the oven to 325° F. Lightly oil a 9-by-13-inch baking dish. Cook the macaroni in boiling salted water according to package directions and drain.

In a large skillet over medium-high heat, brown the beef, breaking it up with a wooden spoon. Add the oregano, basil, salt, onion, and green pepper (if using).

Spread out the cooked macaroni in the baking dish and top with the meat in an even layer. Drizzle with the tomato sauce and sprinkle the top with the mozzarella and Cheddar cheeses. Bake for 25 to 30 minutes, until the cheese is melted and the casserole is bubbly. Top with the Parmesan and the pepperoni (if desired).

    Serves 6 to 8
