    Sloppy Joes

    Recipe Introduction

    "Mom often made sloppy Joes when she wanted to have a quick weeknight dinner. Eating sloppy Joes is a messy matter, but frankly, that's part of the fun. There's no way you can eat one and keep it from falling apart, so Mom put extra toasted buns on the table so we could wipe our plates clean."

    List of Ingredients

    â—¦ 1 tablespoon extra-virgin olive oil
    â—¦ ½ cup shredded carrots
    â—¦ 1 medium onion, finely chopped
    â—¦ 1 celery stalk, finely chopped
    â—¦ 1 jalapeño, stemmed, seeded, and diced
    â—¦ 2 cloves garlic, minced
    â—¦ ½ teaspoon kosher salt
    â—¦ 2 pounds ground beef
    â—¦ 2 cups tomato sauce
    â—¦ ½ cup ketchup
    â—¦ 1 tablespoon Worcestershire sauce
    â—¦ 1 tablespoon red wine vinegar
    â—¦ 1 teaspoon hot sauce
    â—¦ 2 tablespoons dark brown sugar
    â—¦ ½ teaspoon dried thyme
    â—¦ Pinch of ground cloves
    â—¦ Pinch of cayenne
    â—¦ Pinch of freshly ground black pepper
    â—¦ 6 hamburger buns

    Recipe

    Heat the olive oil in a large sauté pan over medium-high heat. Add the carrots and sauté until tender, about 5 minutes. Add the onion, celery, and jalapeño and cook until the onion is translucent, about 5 minutes. Add the garlic and cook for 30 seconds. Transfer the vegetables to a medium bowl and set aside.

    Sprinkle the bottom of the pan with the salt and heat it over high heat. Working in batches, crumble the beef into the pan and let it cook undisturbed until the bottom is well browned. Flip and continue to cook until well browned. Using a slotted spoon, transfer the beef to the bowl with vegetables.

    Drain off all but 1 tablespoon of fat from the pan. Return the beef-vegetable mixture to the pan and stir in the tomato sauce, ketchup, Worcestershire sauce, vinegar, hot sauce, brown sugar, thyme, cloves, cayenne, and black pepper. Bring the mixture to a simmer and cook until the beef is cooked through, about 10 minutes. Taste and adjust the seasonings. Divide the mixture among the bottom halves of the buns. Cover with the top halves and serve.

    Makes 6 servings
