    Unicorn Milkshakes

    Recipe Introduction

    "Uggghhhh, this is so good that you can truly just let your kids have a sip (they'll be SO happy) and take the rest to drink with you to go cry in the closet over the state of the world. (I figure this thought is evergreen now, so I've decided to just go ahead and write this in my book.) Anyhoo, these shakes are the opposite of sad: they are pudding-powder milkshake cups of unicorn magic, with random crunches of sugar throughout, topped with flavored cream and more sprinkles. They shoot instant happiness into both your heart and brain. If you're making them for young kids, just trust me when I say they'll love it. And you will, too: Luna had two sips and went into a birthday-party-sugar-coma six-hour sleep so youuuuu are welcome."

    List of Ingredients

    ◦ 4 cups whole milk (or alternative milk of your choice)
    ◦ 1 (3.4-ounce) package instant vanilla pudding mix (make sure it's instant!)
    ◦ Pinch of kosher salt
    ◦ Assorted colors of fine sanding sugar
    ◦ 1 cup heavy cream
    ◦ 2 tablespoons confectioners' sugar
    ◦ 2 tablespoons corn syrup

    Special equipment:
    ◦ Small pastry brush or other clean paint brush, preferably no more than inch wide
    ◦ Whipped cream dispenser (totally optional!), see Note

    Recipe

    In a pitcher or other pourable container, whisk together the milk, pudding mix, and salt and refrigerate until ready to use (up to 3 days in advance).

    In a medium bowl, dissolve 1 teaspoon of the sanding sugar color of your choice (Luna likes pink!) in a few drops of hot water and whisk it with the cream and confectioners' sugar. If using the whipped cream canister, pour it into the canister and chill. Otherwise, whip it by hand to soft peaks and refrigerate. (If you've never done this before, just whip the cream with a whisk and you'll see it eventually thicken. When it gets thick enough to hold little peaks that flop over at the tip of the whisk, you're done.)

    Select the right glasssomething between 12 and 16 ounces, something you would want to drink a shake out ofmade of clear glass is good! Or use coffeehouse-style to-go plastic cups with domed tops). Set up as many small pinch bowls as you have colors of sanding sugar.

    Dip the end of the pastry brush into the corn syrup (less is more here) and, starting from the inside base of the glass, paint a strip of corn syrup up to the top of the glass. Sprinkle the first color of sanding sugar on top of the corn syrup, shaking and tapping to cover. Turn the excess sanding sugar back out into its pinch bowl. Continue with the corn syrup and sanding sugar, until the entire inside of the glass is colored. Fill the glass with 1 cups of the vanilla pudding shake, then top with a generous amount of colored whipped cream. Sprinkle the cream with sanding sugar to decorate and place a colorful straw in the shake.

    Makes 2 shakes






    ❧ Note: Using a professional whipped cream dispenser will get you fancy cream and make you feel like a chef. They're as cheap as $30, and a box of 24 "chargers" will run you about $25. Every time you want to make fresh whipped cream you pour it into the dispenser, then use a charger to infuse the cream with CO₂.
