    "Bunchables" Taco Boxes

    Recipe Introduction

    "What in the world is the appeal of the Lunchable? I still to this day cannot figure it out. My children would spot the yellow boxes in the grocery store; their eyes would widen and then glaze over as if they were looking at new money. Legs and arms would go flying as they escaped the grocery cart. Full speed ahead to the lunch meat section. Once I caught up with them, I would have to pry the boxes out of their little hands, followed by screaming and tears. If I had handed them three slices of American cheese, three slices of slick turkey, and one cookie on a plate, the girls would have looked at me like I was completely insane. But put it in a box, and the girls couldn't get enough. So I stole this approach, using containers with multiple little compartments to make healthy (and more delicious) lunches. If you are wondering if this stopped all the drama at the Kroger, it didn't. But at least now the fight was in the cereal aisle."

    List of Ingredients

    â—¦ 4 ounces grilled chicken or steak, shredded or chopped (about ½ cup)
    â—¦ 1 tablespoon sour cream
    â—¦ 2 tablespoons salsa
    â—¦ 3 tablespoons shredded Cheddar cheese
    â—¦ 4 cherry tomatoes, chopped
    â—¦ 2 corn tortillas

    Recipe

    Divide the ingredients into the compartments of a lunch box or bento box, or multiple small containers; snap the lid on tight and send to school.

    Let your child build their own tacos at lunch.
