    Cold Marinated Prawns

    List of Ingredients


    • 1 lb. medium prawns
    • 1/4 cup fresh orange juice
    • 3 Tbsp fresh lemon juice
    • 1 Tbsp olive oil
    • 1 medium clove garlic, peeled and forced through a press
    • 1 medium shallot, peeled and minced
    • 1 tsp minced fresh rosemary
    • Freshly ground black pepper to taste


    Instructions


    1. Peel and devein the prawns.

    2. Bring a medium pan of water to the boil, add the prawns, and time for 3 minutes. The prawns should be pink and curled at this point; if not, cook for a little longer. Drain and rinse with cold water. Drain again well.

    3. Combine the orange and lemon juices, the olive oil, garlic, shallot and rosemary. Place the shrimp in a bowl and pour the marinade over. Sprinkle with a little black pepper. Cover and marinate in refrigeration 2 hours.

      Makes 4 servings.
