Cold Marinated Prawns

List of Ingredients
- 1 lb. medium prawns
- 1/4 cup fresh orange juice
- 3 Tbsp fresh lemon juice
- 1 Tbsp olive oil
- 1 medium clove garlic, peeled and forced through a press
- 1 medium shallot, peeled and minced
- 1 tsp minced fresh rosemary
- Freshly ground black pepper to taste
Instructions
- Peel and devein the prawns.
- Bring a medium pan of water to the boil, add the prawns, and time for 3 minutes. The prawns should be pink and curled at this point; if not, cook for a little longer. Drain and rinse with cold water. Drain again well.
- Combine the orange and lemon juices, the olive oil, garlic, shallot and rosemary. Place the shrimp in a bowl and pour the marinade over. Sprinkle with a little black pepper. Cover and marinate in refrigeration 2 hours.
Makes 4 servings.
