Creamy Pasta Salad

- 2 cups small pasta (elbow macaroni, corkscrews, etc.)
- 2 medium carrots, thinly sliced (about 1 cup)
- 1 cup frozen peas
- 1/4 cup fat-free mayonnaise or salad dressing
- 1/4 cup plain lowfat yogurt
- 1 tsp sugar
- 1/2 tsp salt
- 1/8 tsp white or black pepper
Instructions
- In a large saucepan, cook the pasta according to package directions, adding the carrots to the water for the last 7 minutes of cooking. Drain pasta and carrots well.
- Stir in the peas; rinse with cold water to chill quickly. Drain again; transfer to a serving bowl. Cover and chill until ready to add dressing.
- To make the dressing, stir together the mayonnaise or salad dressing, yogurt, salt, and pepper. Pour dressing over pasta and vegetables.
Makes 6 servings.
