    Creamy Pasta Salad

    List of Ingredients


    • 2 cups small pasta (elbow macaroni, corkscrews, etc.)
    • 2 medium carrots, thinly sliced (about 1 cup)
    • 1 cup frozen peas
    • 1/4 cup fat-free mayonnaise or salad dressing
    • 1/4 cup plain lowfat yogurt
    • 1 tsp sugar
    • 1/2 tsp salt
    • 1/8 tsp white or black pepper


    Instructions


    1. In a large saucepan, cook the pasta according to package directions, adding the carrots to the water for the last 7 minutes of cooking. Drain pasta and carrots well.

    2. Stir in the peas; rinse with cold water to chill quickly. Drain again; transfer to a serving bowl. Cover and chill until ready to add dressing.

    3. To make the dressing, stir together the mayonnaise or salad dressing, yogurt, salt, and pepper. Pour dressing over pasta and vegetables.

      Makes 6 servings.
