    Glazed Apple Tart

    List of Ingredients


    • 2 pkgs. (8 oz. each) light cream cheese, softened
    • 2/3 cup granulated sugar, divided
    • 2 egg whites
    • 2 tsp vanilla extract
    • 3 Golden Delicious apples (peeled, cored, and cut into 12 wedges each)
    • 1/2 tsp ground cinnamon
    • 1/2 cup orange marmalade, melted and strained
    • *
    • -- For the Crust --
    • 1-1/2 cups vanilla wafer crumbs (about 40 cookies)
    • 2 Tbsp granulated sugar
    • 2 Tbsp margarine, melted
    • 1 Tbsp water


    Instructions


    1. Preheat oven to 375 degrees (F). Spray a 10-inch springform pan with vegetable cooking spray and set aside.

    2. Prepare the crust: In a medium bowl, combine wafer crumbs, sugar, margarine, and water. Mix well. Press into bottom and up sides of prepared pan. Bake until golden, about 15 minutes. Place on a wire rack to cool.

    3. In a large mixing bowl, using an electric mixer set on medium speed, beat cream cheese, 1/2 cup of sugar, egg whites, and vanilla until fluffy. Pour cream cheese mixture into crust. Arrange apples on top.

    4. In a small bowl, combine the remaining sugar and cinnamon. Sprinkle over apples. Bake until apples are tender, about 1 hour. Place on a wire rack to cool.

    5. Just before serving, glaze the tart: Brush the melted (strained) marmalade in a thin, even layer over the top of the cooled tart.
