Glazed Apple Tart

List of Ingredients
- 2 pkgs. (8 oz. each) light cream cheese, softened
- 2/3 cup granulated sugar, divided
- 2 egg whites
- 2 tsp vanilla extract
- 3 Golden Delicious apples (peeled, cored, and cut into 12 wedges each)
- 1/2 tsp ground cinnamon
- 1/2 cup orange marmalade, melted and strained

- 1-1/2 cups vanilla wafer crumbs (about 40 cookies)
- 2 Tbsp granulated sugar
- 2 Tbsp margarine, melted
- 1 Tbsp water
Instructions
- Preheat oven to 375 degrees (F). Spray a 10-inch springform pan with vegetable cooking spray and set aside.
- Prepare the crust: In a medium bowl, combine wafer crumbs, sugar, margarine, and water. Mix well. Press into bottom and up sides of prepared pan. Bake until golden, about 15 minutes. Place on a wire rack to cool.
- In a large mixing bowl, using an electric mixer set on medium speed, beat cream cheese, 1/2 cup of sugar, egg whites, and vanilla until fluffy. Pour cream cheese mixture into crust. Arrange apples on top.
- In a small bowl, combine the remaining sugar and cinnamon. Sprinkle over apples. Bake until apples are tender, about 1 hour. Place on a wire rack to cool.
- Just before serving, glaze the tart: Brush the melted (strained) marmalade in a thin, even layer over the top of the cooled tart.
