    Guiltless Mashed Potatoes

    List of Ingredients


    • 2 lbs. red potatoes, peeled
    • 1 sprig fresh rosemary
    • 1/4 cup chicken broth
    • 1/4 cup lowfat (1 %) milk
    • 1 tsp salt
    • 1/4 tsp freshly ground pepper


    Instructions


    1. Bring potatoes, rosemary sprig, and enough cold water to cover potatoes by 2 inches to boil in a large saucepan. Reduce heat; cover and simmer 18 to 20 minutes, until potatoes are fork-tender.

    2. Drain potatoes; discard rosemary. Microwave broth and milk in a microwave-proof cup on HIGH for 1 minute, until hot. Return potatoes to saucepan and cook 2 minutes over low heat to dry.

    3. Coarsely mash potatoes with a potato masher or a large wooden spoon. Stir in broth mixture, salt and pepper until combined and heated through.

      Makes 6 servings.
