Hot Turkey Salad

List of Ingredients
- 1/2 cup reduced-calorie mayonnaise or salad dressing
- 1/4 cup orange juice
- 1 Tbsp honey
- 1/2 tsp dry mustard
- 2 turkey breast tenderloin steaks (1/2 lb. total)
- 4 cups mixed salad greens
- 1 cup seedless red grapes
- 6 to 8 large strawberries
- 1 kiwi fruit, peeled and sliced
- 1 yellow summer squash or small cucumber, sliced and halved
Instructions
- For dressing: In a small bowl, stir together mayonnaise or salad dressing, orange juice, honey, and mustard until combined. Remove 1 tablespoon of the dressing. Ifdesired, remove additional dressing to brush onto the turkey while it broils. Cover and chill the remaining dressing.
- Preheat broiler. Spray an unheated rack of a broiler pan with nonstick coating. Place the turkey on the rack; brush the 1 tablespoon dressing over the turkey. Broil 4 inches from heat for 10 minutes or until turkey is no longer pink, turning once.
- Meanwhile, arrange greens on 2 dinner plates. Arrange grapes, strawberries, kiwi fruit, and squash or cucumber atop greens. Slice each turkey tenderloin crosswise into 5 or 6 pieces; place atop greens.
Serve salad with remaining chilled dressing. Any leftover dressing can be stored in the refrigerator for up to 1 week.
