    Shrimp & Strawberry Salad

    Canadian Press / USA Rice


    List of Ingredients


    • 3 cups cooked rice
    • 1/2 lb. peeled, deveined, cooked small shrimp
    • 3/4 cup thinly sliced celery
    • 2/3 cup reduced-calorie mayonnaise
    • 1/2 cup lowfat strawberry yogurt
    • 1 tsp dried mustard
    • 1 tsp lemon juice
    • 1/2 tsp salt
    • 1-1/2 cups sliced fresh strawberries
    • Lettuce leaves


    Instructions


    1. In a large bowl, combine the rice, shrimp and celery.

    2. In a small bowl, combine the mayonnaise, yogurt, mustard, lemon juice and salt; stir into the rice mixture. Fold in strawberries. Cover and chill until serving time.

    3. To serve: Arrange lettuce on individual serving plates; top with salad.

      Makes 6 servings.
