Shrimp & Strawberry Salad

List of Ingredients
- 3 cups cooked rice
- 1/2 lb. peeled, deveined, cooked small shrimp
- 3/4 cup thinly sliced celery
- 2/3 cup reduced-calorie mayonnaise
- 1/2 cup lowfat strawberry yogurt
- 1 tsp dried mustard
- 1 tsp lemon juice
- 1/2 tsp salt
- 1-1/2 cups sliced fresh strawberries
- Lettuce leaves
Instructions
- In a large bowl, combine the rice, shrimp and celery.
- In a small bowl, combine the mayonnaise, yogurt, mustard, lemon juice and salt; stir into the rice mixture. Fold in strawberries. Cover and chill until serving time.
- To serve: Arrange lettuce on individual serving plates; top with salad.
Makes 6 servings.
