Simple Soft Tacos with Corn Salsa

- 3/4 cup prepared salsa
- 1/2 cup frozen corn kernels, defrosted
- 1 Tbsp minced cilantro
- 1 Tbsp fresh lime juice

- 4 flour tortillas (not frozen)
- 1/2 lb. pkg. skinned and boned roasted chicken breast, finely diced
- 1 Tbsp minced cilantro
- 2 cups chopped lettuce leaves or 2 cups grated low-fat Cheddar or jack cheese
Instructions
- To prepare the salsa: Combine the salsa, corn, cilantro and lime juice. Set aside.
- To prepare the tacos: Wrap the tortillas in foil and heat in a preheated 250-degree (F) oven 10 minutes.
- In a nonstick skillet placed over medium-low heat, combine 1/4 cup of the salsa with the cooked chicken and cilantro. Heat through. Spoon a quarter of the chicken mixture down the center of each tortilla. Sprinkle with 1/2 cup lettuce or cheese and roll up. Serve with the remaining salsa on the side.
Makes 4 servings.
