    List of Ingredients


    • 1-3/4 cups cake flour
    • 2 tsp baking powder
    • 3/4 cup granulated sugar
    • 3 Tbsp unsalted butter
    • 1 tsp vanilla extract
    • 3/4 cup lowfat milk
    • 3 egg whites
    • *

    • 2 tsp instant coffee, dissolved in 1 Tbsp warm water
    • 1 (8-oz.) container light frozen whipped topping, thawed
    • 1/4 cup all-fruit raspberry jam


    Instructions


    1. Preheat oven to 375 degrees (F). Spray a 9-inch round cake pan with vegetable cooking spray; dust with flour. Set aside. In a medium bowl, sift together flour and baking powder.

    2. In a large mixing bowl, using an electric mixer set on medium-high speed, beat sugar, butter and vanilla for 5 minutes. Reduce mixer speed to low. Alternately beat in flour mixture and milk.

    3. In a medium mixing bowl, using mixer set on high speed, beat egg whites to soft peaks. Fold into batter. Pour into prepared pan.

    4. Bake until a toothpick inserted in center comes out clean, about 25 minutes. Place pan on a wire rack; cool for 10 minutes. Turn cake out onto rack and cool completely.

    5. To prepare frosting: In a large bowl, fold coffee into whipped topping. Halve cake horizontally and place one half on a plate. Spread the jam over the bottom layer. Top with 3/4 cup of the coffee mixture. Top with second cake half. Frost top and sides with remaining coffee mixture.

      Garnish with fresh whole raspberries and mint leaves, if desired.

      Makes 10 slices.
