◦ 1 pound lean ground beef
◦ 1 (6-ounce) can refried beans
◦ 1 cup mild or hot salsa
◦ 1 (15-ounce) can chili without beans
◦ 1 (4-ounce) can chopped green chiles, drained
◦ 1 (10 �-ounce) can cheddar cheese soup
◦ 10 (8-inch) flour tortillas
◦ 2 cups shredded cheddar cheese
◦ Toppings: chopped tomatoes, sliced green onions, sliced black olives, chopped lettuce, sour cream, guacamole, additional salsa
Recipe
Preheat oven to 350 degrees. Brown ground beef in a large skillet over medium-high heat, stirring often, 6 to 8 minutes, or until meat crumbles and is no longer pink; drain. Stir in refried beans.
Cook salsa, chili, green chiles, and soup in a medium saucepan over low heat, stirring occasionally, 3 to 5 minutes, or until heated through. Remove from heat. Stir � cup of salsa mixture into beef mixture. Pour 1 cup of salsa mixture into a lightly greased 13-by-9-inch baking dish. Set aside remaining salsa mixture.
Spoon about � cup of beef mixture evenly down center of each tortilla. Sprinkle 1 to 2 tablespoons shredded cheese over beef mixture, and roll up. Arrange rolled tortillas, seam side down, in baking dish. Pour remaining salsa mixture over tortillas, and sprinkle with remaining cheese. Bake at 350 degrees for 30 to 40 minutes or until bubbly. Let stand 10 minutes. Serve with desired toppings.
