    Neat Sloppy Joes

    Recipe Introduction

    "There were very few times when my mama didn't cook supper for us, but when she fractured her foot and was laid up for a bit, Daddy was in charge of all cooking and cleaning duties. This was when he bought us a dishwasherMama had been asking for one for a while, but it took him having to wash the dishes himself to realize just how badly we needed it! Sloppy Joes were one of Daddy's signature dinners. I've lightened them up here by using lean turkey instead of ground beef."

    List of Ingredients

    ◦ 3 tablespoons olive oil
    ◦ 1 medium onion, finely diced
    ◦ 1 medium bell pepper, seeded and finely diced
    ◦ 1 pound ground turkey
    ◦ 1 (15-ounce) can fire-roasted diced tomatoes
    ◦ 1 (15-ounce) can kidney beans, drained and rinsed
    ◦ cup tomato paste
    ◦ 2 tablespoons apple cider vinegar
    ◦ 1 teaspoon firmly packed light brown sugar
    ◦ Salt and freshly ground black pepper to taste
    ◦ 4 hamburger buns

    Recipe

    In a large skillet set over medium heat, heat the oil until it shimmers, about 2 minutes.

    Add the onion and bell pepper and saut until softened, about 10 minutes. Add the turkey, breaking it up with a wooden spoon, and cook until browned, 5 to 7 minutes.

    Add the tomatoes, beans, tomato paste, vinegar, sugar, salt, and pepper, and cook for 5 to 10 more minutes or until heated through. Serve on hamburger buns.

    Makes 4 sandwiches



    ❧ Tip:
    You need to use olive oil to brown the turkey because the meat is so lean. As a result, you don't need to drain the meat before adding in the other ingredients.
