    Garam Masala Seasoning

    List of Ingredients


    • 2 tsp whole black peppercorns
    • 1 tsp whole cloves
    • 2 tsp cardamom seeds (out of the pods)
    • 2 tsp cumin seeds
    • 1 tsp coriander seeds
    • 1 bay leaf, crumbled
    • 1/2 tsp ground cinnamon
    • 3 Tbsp kosher salt


    Instructions


    1. With a spice grinder or mortar and pestle, grind the peppercorns, cloves, cardamom, cumin, coriander and bay leaf until coarsely ground. Mix in cinnamon and salt.

      Makes about 1/4 cup.

      CHEF'S NOTE: The Garam Masala recipe is easily doubled. Store tightly covered in a cool, dry place. Use on lamb, chicken, white fish, carrots, zucchini or eggplant, or to season basmati rice.
