Garam Masala Seasoning

List of Ingredients
- 2 tsp whole black peppercorns
- 1 tsp whole cloves
- 2 tsp cardamom seeds (out of the pods)
- 2 tsp cumin seeds
- 1 tsp coriander seeds
- 1 bay leaf, crumbled
- 1/2 tsp ground cinnamon
- 3 Tbsp kosher salt
Instructions
- With a spice grinder or mortar and pestle, grind the peppercorns, cloves, cardamom, cumin, coriander and bay leaf until coarsely ground. Mix in cinnamon and salt.
Makes about 1/4 cup.

CHEF'S NOTE: The Garam Masala recipe is easily doubled. Store tightly covered in a cool, dry place. Use on lamb, chicken, white fish, carrots, zucchini or eggplant, or to season basmati rice.
