Jerk Marinade

List of Ingredients
- 4 habaneros, stemmed, seeded, chopped
- 1/4 cup finely chopped onion
- 6 green onions, white part only, chopped
- 1/4 cup red wine vinegar
- 1/3 cup vegetable oil
- 2 Tbsp soy sauce
- 2 Tbsp dark rum
- 1 Tbsp brown sugar
- 1 Tbsp fresh thyme
- 1 tsp freshly ground black pepper
- 1/2 tsp ground cloves
- 1/2 tsp ground nutmeg
- 1/2 tsp ground allspice
- 1/4 tsp ground cinnamon
Instructions
- Combine all the ingredients in a bowl and mix well. Let sit for 1 hour to blend the flavors. (Cover and refrigerate if not using immediately. Or pour into freezer-proof container, leaving 1/2-inch headspace, and freeze.)
Makes 1-1/2 to 2 cups.
