Oriental Plum Sauce Marinade

- 2/3 cup plum sauce
- 2 tsp hoisin sauce
- 2 Tbsp dry sherry
- 1 Tbsp low-sodium soy sauce
- 2 Tbsp peanut oil
- 1 tsp Oriental sesame oil
- 1 Tbsp grated fresh ginger
- 2 cloves garlic, minced or pressed
- 1/4 cup chopped fresh cilantro leaves
- 1/2 tsp crushed dried red chili pepper
Instructions
- Combine plum sauce, hoisin sauce, sherry, and soy sauce in non-reactive bowl. Whisk in peanut oil and sesame oil, a little at a time. Add ginger, garlic, cilantro and chili pepper.
- To use, marinate chicken breasts for 4 to 6 hours, chicken wings for 6 to 8 hours, or spare ribs for 8 hours or overnight.
Makes 2 cups.
