    Thai Red Curry Marinade

    List of Ingredients


    • 1 cup unsweetened coconut milk
    • 1/4 cup red curry paste
    • 1/4 cup fresh lime juice
    • 3 Tbsp chopped cilantro
    • 1-1/2 Tbsp vegetable oil


    Instructions


    1. Heat coconut milk and curry paste in a saucepan over low heat, stirring for about 2 minutes just until the paste dissolves. Cool slightly and stir in the remaining ingredients.

      Makes about 1-1/3 cups,
      enough for 2-1/2 lbs. bone-in chicken or pork chops or 2 lbs. pork tenderloin.

      Marinate about 3 hours.
