Thai Red Curry Marinade

- 1 cup unsweetened coconut milk
- 1/4 cup red curry paste
- 1/4 cup fresh lime juice
- 3 Tbsp chopped cilantro
- 1-1/2 Tbsp vegetable oil
Instructions
- Heat coconut milk and curry paste in a saucepan over low heat, stirring for about 2 minutes just until the paste dissolves. Cool slightly and stir in the remaining ingredients.
Makes about 1-1/3 cups,
enough for 2-1/2 lbs. bone-in chicken or pork chops or 2 lbs. pork tenderloin.
Marinate about 3 hours.
