Spice Rub for Turkey

- 2 tsp whole coriander seeds (or 3/4 tsp ground coriander)
- 1-1/2 tsp cumin seeds (or 1/2 tsp ground cumin)
- 1/2 tsp whole allspice (or 1/8 tsp ground allspice)
- 1 tsp mustard seeds (or 1/2 tsp ground mustard)
- 1-1/2 Tbsp sweet paprika
- 1 Tbsp ground ginger
- 1-1/2 tsp dried thyme, crushed
- 1/2 tsp cayenne pepper
- 1/2 tsp ground cinnamon
Instructions
- If using whole seeds and whole allspice, toast them in a small skillet over medium heat about 3 minutes, or until fragrant. Shake pan occasionally. Cool, then grind in a spice grinder.
- Otherwise, combine ground coriander, cumin, allspice and mustard in a small bowl. Stir in paprika, ginger, thyme, cayenne and cinnamon to the ground spices. Cover with plastic wrap and set aside.
Makes about 4-1/2 tablespoons.
